My favorite game


There are various kinds of outdoor games. Cricket, football, volleyball, hockey, lawn-tennis and badminton are the commonest forms of outdoor games, and each man has his own choice. Some like football, others volley-ball, while many others consider cricket to be the best. Well-to-do people love to enjoy a game of polo. So everybody has his own favourite game and mine is football. I must explain why I like foot ball more than any other games.

Of course I am too poor to play polo; for it is a very expensive game, fit only for the wealthy. Cricket is one of the best of outdoor games; but it requires a lot of time. Cricket matches last for several days. Hence it is fit for those who have plenty of leisure. As far as I am concerned I prefer a game that is more active and exciting. Tennis, badminton and volley-ball do not provide so much exercise as football.

The only rival of football is hockey. Both may be regarded as almost equally exciting. Therefore it may be difficult to make a choice between them. But I prefer football to hockey. There is noting more interesting and exciting to me than to play or watch a good football match.

Football affords good physical exercise, in which all the muscles and limbs are brought into play. Besides this, football helps to form many good habits. It teaches the players the value and importance of discipline, which is absolutely necessary in whatever sphere of life we may happen to be. Moreover, as football is a game that depends upon harmonious combination and co-operation, it promotes in the players a healthy feeling of co-operation in all affairs: in fact, one can not be a good football player unless he knows the value of discipline and co-operation.

Football is certainly a game of skill and so football matches attract universal interest and affords amusement and recreation to thousands of people. Hence I have a preference for football. 

Healthy Protein Smoothies


A healthy breakfast smoothie that tastes like dessert, I will take one of each flavor please. I'm a firm believer that healthy foods don't need to taste like cardboard, indeed they can be just as delicious as their unhealthy competitors. I don't know if I've mentioned before but I always like to have a healthy, low calorie breakfast and lunch, then at dinner I splurge a little and always have dessert. I exercise 6 days a week because I think it's a good balance for me. I watch Food Network while I run on the treadmill, it always keeps me going =). For breakfast I try to keep it around 300-400 calories 6 days a week (every Sunday I make a big brunch and splurge), so I like to have banana oatmeal, whole grain cream of wheat, whole grain cereal with almond milk or these smoothies with almond milk. Yes, I've made the change over to almond milk. I didn't believe it when I heard some random fact of how many people prefer the taste of almond milk to milk until I tried it myself. I always buy the Vanilla or Original flavor that's 60-70 calories per serving (I always check the label because some have tons of added sugar therefor a lot more calories. I never buy unsweetened). Don't get me wrong though I still love milk, I just prefer almond milk a little more and the fact that has less calories than milk is a definite bonus. The almond milk goes great in these smoothies. 
I love how these are healthy AND delicious! They are packed with protein and antioxidants and they are a good source of fiber. Thanks to that protein and fiber these smoothies will fill you up and keep you going. Pictured is 1/2 serving sizes, so yes, you get two of those glasses per serving listed! Banana Berry Oat Smoothie
Yields 1 large smoothie

Ingredients:

1 cup Almond Milk Plus Protein, divided (I used So Delicious brand with 5g added protein)
1/4 cup quick oats
1 (5.3) oz Strawberry or Blueberry Nonfat Greek Yogurt
1/2 overripe banana, chilled
1/2 cup fresh blueberries, chilled
5-6 ice cubes

Directions:

In a large microwave safe bowl, combine 1/2 cup Almond Milk with 1/4 cup quick oats. Microwave on high power 2 1/2 minutes. Pour cooked oat mixture into a blender along with remaining 1/2 cup almond milk, Greek yogurt, banana and blueberries. Blend mixture on low speed for 2 minutes or high speed for 1 minute. Add in ice cubes and puree until well blended. Serve immediately.

Nutrition:
366 calories per serving, 21 grams of protein 

Note: if you want an even colder smoothie, stir the oatmeal after microwaving and allow to cool at least 5 minutes before blending into smoothie.

Pina Colada Smoothie

Yields 1 large smoothie

Ingredients:
1 cup Almond Milk Plus Protein, divided
1/4 cup quick oats
1 (5.3) oz Vanilla or Strawberry Nonfat Greek Yogurt
1/2 overripe banana, chilled
1/2 cup diced fresh pineapple, chilled
1/4 tsp coconut extract
5-6 ice cubes

Directions:
In a large microwave safe bowl, combine 1/2 cup Almond Milk with 1/4 cup quick oats. Microwave on high power 2 1/2 minutes. Pour cooked oat mixture into a blender along with remaining 1/2 cup almond milk, Greek yogurt, banana, pineapple and coconut extract. Blend mixture on low speed for 2 minutes or high speed for 1 minute. Add in ice cubes and puree until well blended. Serve immediately.

Nutrition:
364 calories per serving, 21 grams of protein

Microwave Coffee Mug Eggs
Yields 1 serving

Ingredients:
2 large eggs
2 Tbsp milk
2 Tbsp shredded cheddar cheese (optional)
salt and pepper to taste

Directions:
Spray a 12 oz. coffee mug with cooking spray or grease with butter.  Add eggs and milk to mug and stir with a fork or whisk until well blended.  Microwave mixture on high for 45 seconds then stir.  Microwave again for 30 - 45 seconds longer until eggs are cooked through.  Immediately sprinkle with optional cheese and season with salt and pepper to taste.  Serve warm.

Broccoli Cheese Mashed Potatoes


These potatoes are so divinely delicious and full of cheesy goodness that they could easily be counted as dinners main course and no longer the plain old side kick.  The best way to describe these potatoes: broccoli cheese soup meets mashed potatoes.  Don't get the wrong idea from that though, these potatoes aren't soupy.  They are fluffy, flavorful and oh so cheesy, with all the right amount of nutrition from the broccoli =).  They are mashed potatoes made luxurious.  One thing I love about these potatoes is that you don't need drippings from meat for gravy, just a whole lot of velvety cheese. I hope you enjoy these irresistible Broccoli Cheese Mashed Potatoes as much as I do!

Broccoli Cheese Mashed Potatoes
Yields 6 - 7 servings

Ingredients:
3 lbs Russet Potatoes
6 3/4 cups cold water, divided
3 cups broccoli florets
3/4 cup whole milk
1/2 cup heavy cream
3 Tbsp butter
1/3 cup sour cream
2 1/2 cups freshly grated medium or sharp cheddar cheese
1/4 cup freshly, finely grated Parmesan Cheese
1/4 cup freshly, finely grated Romano Cheese (or an additional 1/4 Parmesan cheese if you don't want to purchase both)
1/2 tsp onion powder
1/4 tsp garlic powder
Salt and freshly ground black pepper, to taste

Directions:
Peel and dice potatoes into about 2 inch pieces (I used medium potatoes and cut each into 6-8 pieces).  Place diced potatoes in a large pot, cover with 6 cups cold water. Cover pot with lid and cook potatoes over medium high heat for 25 - 30 minutes until potatoes are very tender when pierced with a fork.  
Meanwhile, steam broccoli by placing broccoli in a microwave safe bowl with 3/4 cup water and microwaving on high power for 4 - 5 minutes until very tender (alternately you can steam the broccoli in a steamer basket placed in a saucepan with water over the stove top until tender).  Drain water from broccoli and dice broccoli into tiny pieces, set aside.  Warm milk, cream and butter in a saucepan over the stove top or in the microwave in a microwave safe bowl.
Drain water from potatoes.  Pour potatoes into a large mixing bowl.  Mash potatoes very well with a potato masher.  Add in warm milk mixture, sour cream, Cheddar Cheese, Parmesan Cheese, Romano Cheese, onion powder, garlic powder, salt and pepper then whip mixture with an electric mixer on medium speed about 1 - 2 minutes until fluffy and smooth.  Fold in broccoli.  Serve warm garnished with additional shredded Cheddar Cheese if desired.

Perfect Breakfast Potatoes


If you've been following my blog you've probably noticed by now breakfast is kind of my thang. I love a delicious breakfast meal served up any time of day. I mentioned before how I've posted all these main entrees for breakfast but I've never posted the sides I serve with them. 
I've been making these potatoes for many years, so I'd hope I can say I've perfected the recipe. I've tried different cooking methods, different oils, played with seasonings and now here are the exact results I was looking for. Perfectly tender interior, with a gorgeously browned exterior, slightly moist, with just the right amount of flavor and seasoning. You can use plain old salt and pepper (if you want to be boring =) or you can add some pizzazz with the delicious seasoning blend listed. Below are a few things I wanted to list, that in my opinion, make the perfect breakfast potatoes:

1. Pre-bake the potatoes. If they are cooked halfway before you fry them then they don't end up under cooked in the middle.

7. Leave the skins on when dicing. Less work (no peeling necessary), more taste and more vitamins. With that said why wouldn't you?
2. Extra Virgin Olive Oil was my favorite oil for frying. I've tried butter, bacon fat and vegetable oil and EVOO is where it's at. Not only do the potatoes taste better fried with EVOO but they are much better for you.
3. Season generously. I'm not saying over salt your potatoes, I'm saying a little flavor goes a long way. I love the flavors that garlic and onion powder add to these. Alternately if you love Potatoes O'Brian you could add diced onion, and diced green and red bell pepper.
4. Cover potatoes with a lid while frying, this helps the potatoes maintain some of the moisture as well as helping them evenly cook through.
5. Don't over-stir. If you stir too often you won't get the perfectly golden edges. Just think of flipping a pancake, you don't want to flip it before it's golden, it's the same with breakfast potatoes, you shouldn't "flip" them until they are golden.
6. Serve immediately. Potatoes get soggy after sitting too long after cooking. It's a silly thing but I always get frustrated when people are late for a breakfast meal I'm serving. Breakfast meals/sides aren't nearly as good cold or reheated. This includes breakfast potatoes.

All the above are my personal opinion. I'm not a professional chef (just wannabe =). They are tips I've found through personal experience through trial and error. I hope you love these potatoes and maybe even make them as often as I do (I make them at least once a week, sometimes even three).

Breakfast Potatoes
Yields about 5 servings 

Ingredients:
5 small Russet Potatoes (total weight should be about 1.5 lbs)
1/4 cup Extra Virgin Olive Oil 
1 1/2 - 2 tsp Herb Seasoning, to taste (recipe can be found here)

Directions:
Preheat oven to 400 degrees. Meanwhile rinse and scrub potatoes then pierce each potato several times with a fork. Bake potatoes in preheat oven for 35 minutes. Remove from oven, allow to cool 30 minutes then chill overnight (alternately you could dice and cook potatoes immediately, I've just found it's more convenient to bake them ahead of time when I'm already making baked potatoes for dinner or baking another dish. Also, potatoes seem to cut cleaner if they've been chilled). 
Dice chilled potatoes into 1/2" cubes. Pour extra virgin olive oil into a 10" non-stick skillet and heat over medium high heat. Once oil barely begins to smoke, carefully pour diced potatoes into hot oil. Immediately sprinkle with Herb Seasoning then toss potatoes with a heat proof spatula. Cover pan with lid and cook potatoes, stirring every few minutes as they begin to lightly brown on bottom, about 8 - 12 minutes until potatoes have reached desired tenderness. Serve immediately. 
Note: sometimes I like to sprinkle them with a few tablespoons of Parmesan cheese after frying (cheese is good over nearly everything). Also, they are delish drizzled with ketchup, yep I'm all American with my side of Ketchup =). It's like french fries without ketchup, it just shouldn't be done.

Microwave Coffee Mug Eggs

Scrambled eggs ready to eat in 2 minutes with less mess, less stress and the same delicious fluffy scrambled eggs you get from cooking on the stovetop!  Sign me up!  
I was skimming through some cooking mags while on vacation this week and noticed these incredible and oh so simple eggs.  Yes, it was an ad, and it got me =).  I love scrambled eggs so these immediately caught my attention.  Normally I'm somewhat of a snubber of microwave methods, but if you've ever been to Einstein Bagels and ordered one of their egg sandwiches you may have noticed they cook the eggs in the microwave and they are actually delicious.  So, I thought this simple microwave method must work and I immediately gave it a try the first chance I had, even on vacation.  It's true, I'm addicted to blogging. I was so excited about this recipe find that I couldn't resist the urge to share even on vacation.  
I hope this recipe makes your life a little simpler so you're not swapping out a fresh, warm, nutritious breakfast for some cardboard sugar filled "pastry" because it's the only thing you have time to make.  You can make these nearly as quick as you can pour a bowl of cereal.  Thank you Incredible Edible Egg!

My Idea of the Perfect Scrambled Eggs


After posting banana bread pancakes the other day I realized I haven't even posted the sides I always serve with my breakfast entrees. Well it's about time I do. Most often I serve the the entree with a side of these scrambled eggs and breakfast potatoes, then on special occasions with bacon. 
This is one of those recipes I had to actually had to sit down and measure out what I put in it because it's always been a little of this and a dash of that. I believe one of the most important factors to perfect, fluffy scrambled eggs it stirring/folding them constantly. Every cook has their opinion on what temperature they should be cooked at, some say low and slow and other say high and quick. In my opinion medium - high is perfect. 
The seasoning used for these is one I've been using a lot lately, most often in breakfast dishes. I think I would say it's slightly Italian. It compliments eggs perfectly. You can use the remaining seasoning for burgers or chicken. It's a quick, simple way to add delicious flavor. Enjoy!

Scrambled Eggs
Yields about 4 servings

Ingredients:
8 large eggs
1/2 cup milk*
1/2 Tbsp butter
2 oz grated Cheddar or Monterrey Jack cheese (I use 1 oz of each)
1 Tbsp grated Parmesan cheese
1 tsp herb seasoning, recipe follows or salt and pepper to taste

Directions:
Preheat a 10" non-stick skillet over medium high heat. Crack eggs into a blender, add in milk  (cover with lid) and blend mixture on low speed for 10 seconds. Melt butter in saucepan by spreading it along bottom and edges of skillet. Once butter has lightly begun to bubble, pour blended egg mixture into pan and immediately sprinkle with cheeses and seasoning. Stir eggs CONSTANTLY (a key to perfect eggs) with a spatula, making sure to scrape along the surface of the pan to prevent bottom from browning and a skin from forming. Cook eggs for 3-4 minutes to desired wetness/dryness of eggs (note: they will continue to cook slightly once removed). Remove from heat and serve immediately.

*sometimes I like to do 1/4 cup milk and 1/4 cup buttermilk

Add in ideas:
Diced ham
Fresh salsa (reduce amount of milk if adding this)
Sliced mushrooms
Diced tomatoes
Spinach
Diced avocados
Crumbled bacon

Herb Seasoning

Ingredients:
1 Tbsp salt
1 1/2 tsp freshly ground black pepper (call it your workout for the day)
2 tsp onion powder
2 tsp garlic powder
1 tsp dried parsley
1/4 tsp dried oregano
1/8 tsp dried basil
1/8 tsp dried thyme

Directions:
Whisk together all ingredients in a mixing bowl. Store in an airtight container for up to several months. This seasoning is also great for burgers, chicken, twice baked potatoes and breakfast potatoes.

Dill Chicken Salad Sandwiches


Anyone that doesn't like chicken salad please give these a try, and anyone who likes chicken salad, these sandwiches will make you love chicken salad =)!  They are full of exciting flavors.  I created this recipe because I felt the chicken salad sandwich needed a bit more to it, and cheese!  Your average chicken salad doesn’t have any cheese, rip off =).  These are a great, simple entr├йe to serve at parties, showers, or any day you want serve up an incredible lunch or dinner. They make for an amazing picnic as well.  If you absolutely hate dill then of course you can leave it out and still have a delicious Chicken Salad Sandwich.  I hope you have a chance to try my favorite Chicken Salad Sandwich…

Dill Chicken Salad Sandwiches
Yields about 4 sandwiches

Ingredients:
2 cups shredded, cooked chicken breast
1 cup grapes, sliced into halves
1/2 cup chopped cashews
1/2 cup chopped celery
2 Tbsp chopped green onion
1/3 cup freshly grated Parmesan cheese
1/4 cup mayonnaise
1/4 cup buttermilk
2 tsp lemon juice
1 tsp dried dill
1 tsp dried parsley
1/4 tsp garlic powder
Salt and pepper to taste*
Green leaf lettuce, for serving (optional)

Directions:
In a small mixing bowl, combine mayonnaise, buttermilk, lemon juice, dill, parsley, garlic powder, salt and pepper. Stir until well combined.  Set aside.  In a large mixing bowl, toss together chicken, grapes, cashews, celery, green onion and Parmesan. Pour dressing over chicken mixture and toss mixture until well coated. Serve on a bed of lettuce (if desired) on sliced bread, croissants, rolls, or French bread.

*I only add pepper no salt, I personally think you get enough salt from the parmesan and cashews but if you like more salt 

Healthy Grilled Cheese Sandwich



Healthy grilled cheese, say what!? Can those three words even go together? This sandwich is amazing! Anyone who is a fan of grilled cheese (or not) I suggest you convert to this method. You won't regret it. In my opinion this tastes even better than the original version that's slathered in butter.  You get more flavor and you feel better about eating it.  This is obviously just a recipe for your basic grilled cheese but there are so many variations you can add to this recipe.  You could add in tomatoes or spinach, or your favorite herbs and seasonings or you can just keep it basic like this. Try this recipe out today and it's likely you will become converted to this method, like I have, for life.  Your heart will thank you later =).  Also, keep in mind you can use your favorite cheese but for a lower calorie, less fat cheese Mozzarella may be your better option. 

Healthy Grilled Cheese Sandwich
Yields 1 Sandwich

Ingredients:
2 slices whole wheat bread (preferably fresh)
Sliced Monterrey Jack, Muenster, Cheddar, or Mozzarella Cheese (enough to cover bread)
2 tsp extra virgin olive oil

Directions:
Preheat a small nonstick fry pan over medium low heat. Place cheese slices (enough to cover bread) between 2 slices of wheat bread. Once fry pan is warm drizzle with 1 teaspoon extra virgin olive oil, slightly tilt pan back and forth to evenly spread oil. Place sandwich in oil, cover with a lid and cook until bottom is golden, about 2 minutes. Then lift sandwich with a spatula an add remaining 1 tsp olive oil to fry pan. Flip sandwich and cook opposite side until golden. Serve immediately

Broccoli Ham Grilled Cheese Sandwich

I'm almost at a loss for words to describe this Broccoli Ham Grilled Cheese Sandwich, it is just that good! I guess I will say, let the pictures tell you everything you need to know about this sandwich.  
Several months ago I had, I guess the word is, "pinspiration" when I saw this utterly incredible photo of a Broccoli Grilled Cheese sandwich over at BS in the Kitchen.  It left me salivating and I never did forget about it.  I was purely inspired to make my own rendition.  
If you have tried my Healthy Grilled Cheese Sandwich recipe then this recipe and cooking method will be familiar to you (though this version isn't quite as healthy =). Some may say if you are going to have a grilled cheese sandwich you may as well load on the butter, use white bread and just go all out. I say otherwise, not only because it's better for you to fry with olive oil and use whole grain bread but I think it tastes better. I hope you adapt this cooking method for all your grilled cheese sandwiches, it's a small and simple step to a healthier grilled cheese.  Enjoy!


Broccoli Ham Grilled Cheese Sandwich
Yields 1 Sandwich


Ingredients:
2 slices Double Fiber Bread or Whole Wheat Bread
1.5 oz Medium Cheddar Cheese, grated (about 1/3 cup packed)
1/2 oz Parmesan Cheese, finely grated (about 2 Tbsp)
1/4 cup finely chopped quality ham*
6 small broccoli florets, steamed then diced into small pieces**
1/8 tsp onion powder
1/8 tsp garlic powder
Salt, to taste
Freshly ground black pepper, to taste
1 Tbsp Extra Virgin Olive Oil, divided


Directions:
In a bowl, combine grated Cheddar Cheese, Parmesan Cheese, ham, steamed broccoli, onion powder, garlic powder, salt and black pepper.  Layer mixture over one slice of bread then top with additional slice of bread gently pressing down.  Heat a non-stick fry pan over medium low heat then drizzle 1/2 Tbsp olive oil into pan and tilt pan back and forth to evenly coat, immediately place sandwich in pan (I don't preheat the oil because the outside would darken before the inside cooks through), cover pan with lid and cook 2 - 3 minutes until bottom becomes golden brown.  Carefully lift sandwich out of pan with a spatula then add remaining 1/2 Tbsp olive oil to pan and tilt to coat.  Carefully flip sandwich returning to pan, cover pan with lid, and cook opposite side until bottom is golden brown and cheese has melted about 2 - 3 minutes.  Serve warm.


*I put quality ham because I used leftover spiral sliced ham that I had placed in the food processor then processed several seconds until chopped into very small pieces (I always do this with leftover ham and freeze it.  It's great for salads, sandwiches, eggs and many other entrees. This recipe is a great use for that leftover spiral sliced ham this upcoming Easter).  If you don't happen to have left over ham you could also use deli ham, diced into pieces.


**I use a simple steaming method, I place 1/4 cup water in a microwave safe bowl then add broccoli florets.  Microwave on HIGH power 1 minute 30 seconds to 2 minutes until tender, then drain water and dice into smaller pieces.
